Cheese... Optional


Here is a quick recipe for a "middle-of-the-week" dinner...
I call it:

"Triple P Pasta"
(I will tell you what the 3 p's stand for at the end of this post)

This dish can be made in a jiffy...I found some wonderful pre-cooked ham (sodium nitrate free) that I cut into thin strips and sauteed in a pan with 4 cloves of garlic and a little olive oil.  After cooking for 10 mins or so, I added some frozen peas,  kalamata olives, diced tomatoes and some of this fabulous spread from "Trader Joes".

 
 You can use this spread on toast or crackers...even as a veggie dip, but I frequently use it for a quick pasta sauce or as a thickening agent.

 
As you can see from the label...it contains all "real" ingredients...(acetic acid is a colorless, organic acid, which gives vinegar its sour taste and pungent smell.)
 I usually stir in a little water to thin it out and then sprinkle in whatever spices I have on hand.
Boil the pasta....and your meal is ready!

Oh yes...I didn't forget...the three "P's?..."Pasta, Peas & Pig?"...ok ham!
I bet you thought it was Parmesan...

Yum...I love Trader Joes but they are not in Canada...so everytime I head south I pick up a car full of yummy treats...I will write this one down. xo

Trader Joe's is a great place but the closest one for us is Richmond, an hour away.

I'd love to have that hornet's nest but it is about 25 feet above ground!

that sounds amazing...anything with pasta, and i am IN!!! and ham? extra bonus...i love ham...i do not have a trader joe's, that i know of anyway...i will have to look and see if i can find a suitable substitute...

This looks yummy. I love everything at Trader Joes. They do have such a large selection of "natural" products, which is great. Only problem is...there are no Trader Joes in the state of Texas. Another reason I miss New York! I'm deprived here :(

Carrie~ what a cute name for this recipe. This would be a simple meal to prepare, but looks like you've put a lot into it. I love TJ's! We're fortunate enough to live within a 5 min walking distance. We make several stops there and to Whole Foods.

I wanted to let you know how much I appreciated the scone recipe you had previously posted. We froze blueberries from the farmers market last summer and I was looking for a recipe just like yours.
