Veggie Vavoom!


Who needs meat when there is a bounty of fresh vegetables to be had.
With the variety of veggies available at your local Farmer's Market... 
or perhaps in your own backyard...
vegetables can be the staple of tonight's summer dinner!
 

Use whatever fresh vegetables you have on hand to create this healthy fare.
First I cleaned a head of green cabbage and cut it into wedges.
Then I put the cabbage in my steamer.
While the cabbage was cooking I took shredded carrots and a sliced yellow squash and began to saute them in a splash of olive oil.
As they began to cook I added sliced mushrooms and some beautiful small tomatoes cut in half.
I let these lightly saute until just done...
Since my husband adores spicy food...I added some chili sauce and some lemon pepper.
Finally I sprinkled the mixture with kosher salt right at the end.

TIP: When you add salt at the beginning it contributes to the breaking down of the tomatoes, adding the salt toward the end flavors the dish but allows the tomatoes to retain their texture. Your choice!

I served the veggie mix over the steamed cabbage wedges.
My husband didn't miss the meat at all...and when my daughter stopped by the house later...she ate all the leftovers!
~ Darn...I could go for those today ~

  3. That looks wonderful. I love to saute summer squash with red peppers. I did not know about salt and tomatoes before. That tip will be helpful next time I want my tomatoes to hold together.

  4. Great tip about the salt! I'll remember that. My tomatoes are not happening as of yet, but I like this recipe. I adore cabbage and always look for new ways to have it!

  7. There's nothing like fresh veggies! We're having a nice variety tonight...but we'll saute a little chicken to go with it! Maybe we should try all veggies soon! ♥

  8. Looks so good...love summer and eating fresh! I went out to take pictures of the garden today but it is looking a little rough after the storms we had last night. My parsley is under about an inch of mud!!!

  10. I so agree..we really eat meatless many many nights a week. If it was not for my husbands love of it..I think we would switch to all veggies. xoxoo Happy Friday.

    I love to eat this way, especially in the summer when everything is so fresh. I hadn't thought of serving it over steamed cabbage. What a great idea.

  13. This looks and sounds wonderful! Since I quit my job my hubby has lost about 10 pounds simply from my clean cooking and packing his lunch. We forget how good veggies taste all on their own with a little natural seasoning. **kisskiss** Deb

  14. mmm! i sauteed something very similar last night and it was so good. my go-to ingredient this summer is fresh parsley. everything i toss it into tastes extra fresh.

  15. Carrie, Have you always eaten in such a healthy way? Was this a difficult transition to make. My daughter eats like this, and when I am with her I feel like I am always starving.   16. Looks great...I think fresh fruits and vegs make the heat of July okay. It also makes cooking so much easier...got to the farmers market again...after making pickles.

    Funny, the word for verification is tortur. That's the way I felt seeing those veggies and not being able to taste them.LOL

    thanks for checkin in on me over the summer....i hope to start blogging soon again....summer has been a whir....

    i have to just add that i love love love your craft room. it is an inspiration to me... the picnic baskets for storage and the pot rack for hanging baskets is adorable. i will be working on my craft/sewing room again soon. we finished our loft room...so i now have to permanently find storage for a few things in another room...

    i also love your peasant shirt that you made...love the colors....i have a new couch pillow in our new loft with a similar pattern and color.

    hope to be in touch more, now that summer is winding down.....
