Day 4: A day in the life (& death) of a Giant Zucchini!

Baked Zucchini Parmesan Rings


These are easy...just slice the zucchini, drizzle with olive oil,
sprinkle with parmesan cheese and season as desired.
I used a orange/lemon/pepper zest & seasoning salt.
Bake at 375 degrees for about 15-20 mins.
Voila! Yummy & Healthy!

Are you sick of zucchini yet...there is still more to come!

  7. I would love to try this recipe! We are here at our condo so I am looking for things I can make in the oven and on the stove. We usually drizzle olive oil on ours...that is cut lengthwise....and grill it! ♥

  9. Carrie! Thanks for stopping by! So glad you found me via your sister's site. Loved your recent zucchini recipies. It was just Saturday that we got our first batch of "giveaways" from our neighbors garden so I'm just getting started. We love zucchini pancakes. The recipe we use includes shredded carrots! Yum!
