Day 6: A day in the life (& death) of a Giant Zucchini

Double Chocolate Zucchini Brownies

 Wow...day six...one more day to go...
I cheated a little today...
I used a boxed brownie mix...but instead of the usual oil,
I substituted 1/2 cup non-fat plain yogurt and 1/2 cup finely shredded zucchini!
They come out so dense and wonderful...and a bit more healthy too.
I also added chocolate chips to the top prior to baking!




These wonderful bites of chocolatey goodness won't last long!
I have two *special little visitors in the house
that will help gobble them up!

*my grand-niece & nephew have moved here with their mom from California!

My Giant Zucchini is almost gone...one more recipe for tomorrow!

  1. I love these brownies, the zuc makes them so moist. I would like to have seen a pic of this GIANT zuc...how big was it anyway?! LOL

  2. I am growing zuchini next year for sure. I have been reading all your receipes and who knew there were so many ways to use a zuchini. And only one at that.
    I am going to try the salad as soon as I get to the store. It sounds so refreshing for this hot weather.

  3. Carrie, this must have been the biggest zucchini the world has ever seen! :-) You're going to get 7 days out of it!! I like that you substituted yogurt and zucchini for the oil in the brownies. I'm going to try that next time. I've done that with prune puree and applesauce before.

  9. Wow, I think you should write a zucchini cookbook. I'm amazed at how far you've stretched that one squash.
    These brownies look yummy. I'm going to try this next time I make them.

    after zucchini
    you could start on rhubarb

    Since you are sharing, here is a great recipe my mother gave me:
    called
    Zucchini Mexicali

    1/4 cup olive oil
    4 cups unpeeled, thinly sliced Zuc.
    1 large carrot, coarsley grated
    1 cup chopped onion
    3/4 cup chopped celery
    1/2 green pepper, cut into thin strips
    1/2 tsp garlic salt
    1/4 tsp dried basil

    Toss together well and cook, covered for 4 min. stir occasionally. Mix 1/2 package of Taco seasoning mix (or to your liking)
    2 tsp prepared mustard
    stir into vegetables.
    At the end
    add 2 tomatoes wedged and just warmed into zuc. mixture. (until heated through)
    don't overcook the tomatoes

    IT IS GOOD.
