Really, I can't wait to make these.Just a little something from Judyhttps://www.blogger.com/profile/07436711032386582707noreply@blogger.comtag:blogger.com,1999:blog-3292206568894855007.post-42796634551664673562011-07-22T19:32:51.862-07:002011-07-22T19:32:51.862-07:00sounds delish...still think you could make that co...sounds delish...still think you could make that cookbook<br />after zucchini<br />you could start on rhubarb<br /><br />Since you are sharing, here is a great recipe my mother gave me:<br />called<br />Zucchini Mexicali<br /> <br />1/4 cup olive oil<br />4 cups unpeeled, thinly sliced Zuc.<br />1 large carrot, coarsley grated<br />1 cup chopped onion<br />3/4 cup chopped celery<br />1/2 green pepper, cut into thin strips<br />1/2 tsp garlic salt<br />1/4 tsp dried basil<br /><br />Toss together well and cook, covered for 4 min. stir occasionally. Mix 1/2 package of Taco seasoning mix (or to your liking)<br />2 tsp prepared mustard<br />stir into vegetables.<br />At the end<br />add 2 tomatoes wedged and just warmed into zuc. mixture.
