{Coffee Saved our Marriage}

Our daughter, Grace gave this screen print to my husband and I
for our anniversary quite a few years ago.

Although it is an odd & quirky desgin... something about it spoke to her and from house to house
as we have moved, it has been hung in a prominent place in our home.

During a difficult and challenging time in our marriage as we were feeling the strain...
my husband & I were standing in the hallway near the print having a disagreement
when my youngest daughter, then only about 8 came out of her room nearby.
Hearing our argument she pointed to the screen print and blurted out ...

"Well why don't you both just go have a cup of coffee?"

We looked at each other and couldn't help but smile.
In her innocence and youth she had made a good point.
Were things that impossible & important that they could not be worked out?

That screen print along with our daughters insight
was an unexpected catalyst towards healing and reconciliation.

In our recent downsizing this past May...I considered adding the picture to the garage sale pile...
until I was reminded once again, by a well-meaning daughter, now 16 yrs old...
You can't get rid of that mom....and she was right I couldn't!

{China Beach}

My husband and I were able to take a little get-a-way to the coast
this past weekend, and although it was very stormy and a time for huddling up
and watching the waves crashing to shore...
we unexpectedly happened upon a rummage sale on our way to grab a coffee in town.
After fighting the pouring rain and a umbrella that was determined to turn itself inside out
we entered the building only to find an assortment of unpromising odds and ends
...no treasures in sight!
But then... as we turned to leave... I noticed two boxes sitting underneath one of the tables
newspaper crumpled over the top
and a  "$15 for all" price crudely written on one of the flaps.
A sight like that calls to me and I just had to have a peak!

This is what I found...

61 pieces of beautiful china made in Japan!
With this lovely pattern...

Score!
I asked if they would take $10 and it was mine!

{Wrap and Roll}

It seems that in January when everyone is making a vow
to eat healthier most find it difficult to do.
But it's not...really!
You just have to set your mind to do it!
Just take this bunch of fresh & "good for you" ingredients...

Chop up some cabbage, squash, onions and carrots...
Saute them in some olive oil in a large fry pan or wok...along with this...

Add a little soy sauce, teryaki or your favorite seasonings...
And you get a very healthy mix...

You can eat it all by itself or make...

Yummy...delicious...healthy "Lettuce Wraps"...Just wrap and...

...roll!
No excuses...eat healthy...today and tomorrow too!
It's easy...and
You will be happy you did!

{a tiny collection}

Sitting on a shelf in my dining room is this unassuming jar
filled with little wooden painted treasures....
It is my collection of
vintage birthday candle holders!

Aren't they sweet?
They each have a little hole in the top to hold a small birthday candle!
I just love how they look in the jar...
and of course on a cake!

...funny the little things that can make us smile :)

{Portable Omelets} gluten free too!

Breakfast is so important but time can be a crunch!
Whip up a batch of these mini-crustless quiches.
They freeze great and reheat in minutes as hot breakfast bites.

The lack of crust makes them a snap.
They are wonderful to have on hand for both kids and adults.
Just fill with their favorite morsels -- turkey sausage, cheese, mushrooms, peppers?
On a busy morning they can be quickly warmed in the microwave for...
breakfast on the go!

 Ingredients
  • 8 ounces turkey breakfast sausage crumbled into small pieces
  • 1 teaspoon extra-virgin olive oil
  • 1/4 cup shredded cheese (your choice)
  • 1 teaspoon freshly ground pepper
  • 5 eggs
  • 3 egg whites
  • 1 cup milk
  • Mushrooms, peppers, onions or your choice of  "add-ins
  1. Position rack in center of oven; preheat to 325°F. Coat a nonstick muffin tin generously with cooking spray
  2. Heat a large nonstick skillet over medium-high heat. Add sausage and cook until golden brown, 6 to 8 minutes. Transfer to a bowl to cool. Add oil to the pan. Saute the "add-ins" stirring often, until golden brown, 5 to 7 minutes. Transfer to the bowl with the sausage. Let cool for 5 minutes. Stir in cheese.
  3. Whisk eggs, egg whites and milk in a medium bowl. Divide the egg mixture evenly among the prepared muffin cups. Sprinkle a heaping tablespoon of the sausage/cheese mixture into each cup.
  4. Bake until the tops are just beginning to brown, 25 minutes. Let cool on a wire rack for 5 minutes. Place a rack on top of the pan, flip it over and turn the quiches out onto the rack. Turn upright and let cool completely.
  5. Make Ahead Tip: Wrap individually in plastic wrap and refrigerate for 3 days or freeze for one month.
  6. To re-heat, remove from plastic wrap, wrap in a paper towel and microwave for 30-60 secs.
  7. Omit the sausage for vegetarian style!

As American as Apple Pie...

What better way to celebrate the privilege and freedom of living in
America
then toasting in the New Year....
 with an All-American Apple Pie!

Americans eat more apples and apple pies than any other people,
so that these two things are considered to be almost American national foods.
Apples are the "King of Fruits"!
The average person eats 65 apples per year.
About ten thousand different kinds of apples are known in the world.
More than seven thousand kinds are grown in America!  Wow!

Apple Pie
My Yummy New Years Day Tradition!
Oh I know what you're thinking...wait a minute...
...what about the obligatory New years Diet Resolution???

Well there's always tomorrow...perhaps I 'll make some baked Apple Chips?
