Who needs meat when there is a bounty of fresh vegetables to be had.
With the variety of veggies available at your local Farmer's Market...
or perhaps in your own backyard...
vegetables can be the staple of tonight's summer dinner!
Use whatever fresh vegetables you have on hand to create this healthy fare.
First I cleaned a head of green cabbage and cut it into wedges.
Then I put the cabbage in my steamer.
While the cabbage was cooking I took shredded carrots and a sliced yellow squash and began to saute them in a splash of olive oil.
As they began to cook I added sliced mushrooms and some beautiful small tomatoes cut in half.
I let these lightly saute until just done...
Since my husband adores spicy food...I added some chili sauce and some lemon pepper.
Finally I sprinkled the mixture with kosher salt right at the end.
TIP: When you add salt at the beginning it contributes to the breaking down of the tomatoes, adding the salt toward the end flavors the dish but allows the tomatoes to retain their texture. Your choice!
I served the veggie mix over the steamed cabbage wedges.
My husband didn't miss the meat at all...and when my daughter stopped by the house later...she ate all the leftovers!
