Brownie Pops


This years Easter Basket treats  for my family....
Bake brownies according to package directions in an 8 X 8 pan
so they will be thicker.
When finished baking, cool just to the touch...
then scoop out some of the baked brownie while still warm
and form into balls.
Place in fridge to completely cool...
then poke with a lollipop stick, dip in melted chocolate and sprinkle as desired!

J'aime la cuisine française

 I went to a fun & free Cooking demo given by a local French trained chef here in Portland!
It was put on by "Mix" magazine 
Chef Louisa Neumann
 It was a demonstration of a handful of fresh summer dishes. 

 And we were able to taste each dish as it went along....
Here a few of my favorites...

(I was surprised at how much I liked this one!)

 Tomato and Cucumber Panzanella Salad

Funfetti Fun...

My daughter wanted us to make "Funfetti" cupcakes to welcome
her two little cousins who just arrived in town for Easter!
When she discovered that we didn't have any Funfetti cake mix in the pantry...
I told her..."No worries...we can make them from scratch"
"We can?", she asked....quite surprised!
"Of Course!"
And here they are!
And they taste so much better than from a box...
 Preheat Oven to 350 degrees

Cream 1 stick butter and 1 1/4 c. sugar.  Beat in 2 eggs and 8 oz. plain
yogurt for 1 minute.  Add 2 c. flour and 1 tea. baking soda into the creamed
mixture until moist.  Add 1 tsp. vanilla and 1 tsp. lemon juice.
Fold in approx. 1/4 c. sprinkles.
Bake 18-21 mins.

My Recipe for frosting changes according to what I have on hand.
This time I used 8 oz. cream cheese, 1/3 c. sour cream, 1/4 c. plain yogurt,
about 2 tsp. lemon juice and 1/2 tsp. vanilla.
Slowly add enough powdered sugar until desired consistency!

{A Little Late Night Baking}


A simple Apple Cake to tame your "sweet tooth"

...and this hit the spot without being too sweet...

Mix together 1 c. plain flour, 1/2 tsp. baking powder, 1/4 tsp. baking soda and 1/4 tsp. salt and set aside.
In bowl of mixer, whisk together 2 eggs and 1/2 c. sugar, then add 1/3 c canola oil and blend that in.
Add the dry ingredients just to mix.  Add 1 c. thinly sliced apple (about one apple) and 1/2 c. walnuts.  
Stir into the mix.  Pour mixture into a greased square or round baking dish.
Bake at 350• for about 30-35 mins.
Enjoy!

{Beckoning Spring}

I couldn't find a springtime wreath that I liked...
so I  created this one.

The little fuzzy chicks can be easily removed when Easter is over!

 Now all we need is some sunshine!

Simple Crockpot Cooking

 I just love my crockpot...nothing fancy....I've had it for years....
Just fill it up, set it for high or low and let it do its job!
This morning at 8:30am before I left for Bible Study
I put in a 3 1/2 lb. Boneless Beef Chuck Roast...
added three apples sliced (skin and all)
one large red onion sliced
Sprinkled some "Johnny's Seasoning Salt" and "Lemon-Pepper" 
and poured in a 1/2 can of chicken broth...

And when I came in the door at 1:30...
I was greeted by an awesome aroma...
and this...



The combination of the apples & the onions is SO tasty!
And if you are watching your carbs...
it is great alone (no rice or potatoes needed)

My daughter and her friend get home from school soon
and they will be hungry...
 I have already had a bowl full...

Hope it lasts 'til dinner time!
