My daughter wanted us to make "Funfetti" cupcakes to welcome
her two little cousins who just arrived in town for Easter!
When she discovered that we didn't have any Funfetti cake mix in the pantry...
I told her..."No worries...we can make them from scratch"
"We can?", she asked....quite surprised!
"Of Course!"
And here they are! And they taste so much better than from a box...
Preheat Oven to 350 degrees
Cream 1 stick butter and 1 1/4 c. sugar. Beat in 2 eggs and 8 oz. plain
yogurt for 1 minute. Add 2 c. flour and 1 tea. baking soda into the creamed
mixture until moist. Add 1 tsp. vanilla and 1 tsp. lemon juice.
Fold in approx. 1/4 c. sprinkles.
Bake 18-21 mins.
My Recipe for frosting changes according to what I have on hand.
This time I used 8 oz. cream cheese, 1/3 c. sour cream, 1/4 c. plain yogurt,
about 2 tsp. lemon juice and 1/2 tsp. vanilla.
Slowly add enough powdered sugar until desired consistency!

I have made frosting from scratch recently, but I don't ever recall making the cake from scratch. Good for you! They look delicious. Funfetti is my youngest daughter's cupcake of choice too!

I have such an apology to make to you, my husband threw away all of my napkins! I had them on the counter ready to mail, and he scooped them up with his newspapers.
