A warm & hearty soup on this cold and rainy day!
(Since we were out of town for Thanksgiving I had some food in the fridge
I wanted to use up before it spoiled!)
Just grab what you have on hand...
and make a big pot of "comfort stew"!
I threw in some carrots, lean ground beef, onions, cabbage and a frozen bag of chow mein I wanted to use up! Add to that a can of tomatoes, some vegetable broth and even a little bit of canned pumpkin I had leftover in the fridge. I also had some fat free sour cream I threw in! Some spices and there you have it!
It was delish and healthy too!

This soup is exactly what I am so hungry for on this cold, windy, and wet evening. But, instead we are having spaghetti(I like that too). I appreciate the recipe that you shared and I am sure there will be many cold evenings for soup in the next few months.

Oh Yum! Don't you just love soup in the winter...on a cold day...mmmmmm...by the end of a hot summer I sure miss not having made soup...which I don't make often.
