~2 Smashing things to make with Pumpkin Puree~
Pumpkin Pancakes (serves 4)
Prepare 1 cup dry pancake mix according to the packagedirections.
Whisk in 1/3 cup canned pumpkin puree.
Pumpkin Whipped Cream (makes 2 cups)
Beat together 1 cup heavy cream, 1/4 cup confectioners' sugar,
and 1 tablespoon canned pumpkin puree until soft peaks form.
I love pumpkin...especially at this time of year!

I've been craving pancakes for dinner and pumpkin pancakes sound perfect. I made pumpkin cookies this week and they were gone in 2 days.

I am avoiding anything pumpkin...I love it so much that I am holding off until Thanksgiving, then I am going to eat everything pumpkin in sight! LOL Love pumpkin pancakes!!! ;D

I absolutely LOVE pumpkin pancakes and have made them several times this fall...so good! I like putting whipped cream on top and sprinkling them with a little cinnamon. The pumpkin whipped cream looks very good also ~ will have to give this a try. Thanks for sharing your wonderful recipes :)
